The recipe for the base for this bar is taken from Obolo's traditional white chocolate recipe. In the blender, they toss in toasted Wheat Coffee, which is a traditional drink of the Mapuche community in southern Chile.
The wheat coffee is black so it turns the color of the chocolate black. Toasted Chilean Hazelnuts (Gevuina avellana) are added to this bar. It is a nut that is native to southern Chile and traditionally consumed by the Mapuche community. Óbolo also added some whole toasted wheat coffee to give the bar a bit of extra crunch. Although it is based on their White chocolate it is not overly sweet. The wheat coffee and the hazelnuts provide a beautiful balance and extra texture.
