Perched on a mountaintop overlooking the extensive jungled hills of the Cahabón region in Guatemala, the co-operative behind this single-origin bar grows and sells cacao, cardamom, cinnamon, and chili peppers. Santa Maria Cahabón was founded in 2004 as a multi-generational effort to responsibly cultivate the land. Intercropping diverse plants throughout the landscape, the families remain committed to sustainable environmental practices while faithfully producing superb cacao. The simplicity of this bar allows notes of orange, toasted almond, and brownie batter to shine.
